Khmer Grilled Lobster

INGREDIENT 

  • 3-5 lobster
  • 250 g lettuce
  • 200 g bean sprout
  • 300 g cucumber
  • 2 lime
  • 3 tbsp peanut , roasted coarsely pound

SAUCE

  • 3 tbsp water
  • 1 tbsp fish sauce
  • 1 tbsp white sugar
  • 1 tbsp lime juice
  • tbsp flour soup ( M’sow soup )
  • 5 garlic cloves
  • 1-2 bird chilies

METHOD 

Thoroughly wash lettuce and herb ( Chi ) and set aside . Then slice cucumber into chips , bean sprout is remove their root ans prepare them on a half side of the plate and reserve other side for lobster .

Grill lobster over the medium high hot-coal until brown and done then remove shell and chop into 3 parts and set on the half side of the plate .

To make sauce , place garlic , bird chili , sugar and flour soup ( M’sow soup ) in the stone mortar then pound until fine then drizzle lime juice , stir well then add fish sauce , stir again . Lastly sprinkle coarsely pounded peanut when start eating .

Note : For the sauce , you can add coconut juice replace water , and a little bit of grilled pounded galangal to get flavor .
